Making New Friends {Part I}

My Childhood:
I grew up on some old backroad, in the middle of the ‘twiggs’, on my parents farm. Their farm was so deep in the South, your closest neighbor was maybe within 1/2 of a country mile.

We were surrounded by Mother Nature on every side, with lots of interesting stories & history at every corner. Back in those days, this ol’ backroad led to (what used to be) a small town.

Those were the ‘good ole days’, when you didn’t need a licence to drive a 4×4 from your house, down to the end of your road, turning off to the right, cruising along the path of a dusty old dirt road, over the ol’ wooden planked Indian Creek Bridge, and up the hill of a loose gravel blacktop road, to your best friends farm, in the curve, on the left.

You also didn’t need an overseer for this scenic drive, if you were over the age of 10.

Life was so easy, and laid back in those days. No one was worried about the dangers of the outside world, because in the town where we all lived, we rarely got any visitors from out of town’ers. This was mainly because our little town was so small, it was usually passed by without a notice.

Now that all of us have grown up, left the nest, and some of us have familys of our own, we always remember the good times that were had, on these ol’ backroads.

Sometimes, if we are in the area – we will slowly cruise drive down that little stretch of road that we used to travel like it was our religion way back when; reminising on all of the memories of the good times with family and friends that took place in this beautiful part of the wilderness.

This Time in Place:
That’s exactly what I was doing, earlier this afternoon…. On my way into town. I was passing the now vacant farm that I spent so many cherished childhood memories at, taking captures of the rich landscape along the way.

I was crawling along the road, when something up ahead caught my eye. I looked just up the hill, at the road infront of me, and gasped – What I saw, made me lose my breath…. “Is that a Wolf??” I asked myself, completely in awe of the majestic creature that was trotting up the road, towards me.

I brought my truck to a smooth halt on the side of the road, and watched the creature as it too, paused in mid stride, in the middle of the road, staring back at me.

We both sat there, gazing at each other for what seemed like several minutes, wondering what the other was going to do next?

Just as I was pulling my phone out, to see if i could sneak a capture or two, without scaring the beautiful creature away, up over the hill came a car that was going way too fast… obviously not paying one bit if attention to the road infront of them. The moment I saw them and noticed the rate of speed in which they were going, I immediately started flipping my daybeams on and off, to get the attention of the speeding & greatly distracted driver.

My actions worked like a charm, the driver slowed a considerable amount, and inched around the beauty. Gradually, they passed me, wearing a sheepish grin on their face, accompanied by a half wave, as if to say “Thanks for the warning.”

After they passed, I managed to get one decent capture. I crept up towards the top of the hill. As I neared the beautiful creature, I noticed that it was not a Wolf, but instead a beautiful Husky, wearing a pink collar.

I was able to creep up to the hill, just a few feet from the beauté, when I stopped the truck, just watching and waiting for a response.

She looked back at me, not moving an inch. I looked at her, smiled as I said, “Hi sweetheart!” As I reached my hand out the window, she immediately came up to me, sniffing my hand and giving me kisses! Again, I spoke to her, saying “You are SO beautiful!! What’s a pretty little thing like you doing out here?”

She instantly started wagging her tail, till her whole body was moving because she was so happy! I was just thankful she didn’t try to eat me!

I pulled off the side of the road, as far as possible, and clicked on my hazards. I cautiously got out of the truck as I grabbed my phone, not wanting her to jump in the cab, and walked the overly estatic ball of fur towards the back of my truck, out of the way of any possible oncoming traffic.

Once I managed to get her to calm her wiggling self down a bit, I took a look at her tag. It read: “Mishka” with a local number below. I got the number off of her tag, and as soon as I hit call, I hear someone in the distance, calling her name…

The line clicks, as someone on the other end of the line picks up and a female voice says, “Hello?”
I ask if this is the owner of a Mishka, I get a “Yes Ma’am, I was just outside calling for her.”

I then go to tell her where she is, and that I would stay here with Mishka, till her owner arrived. She said, “Ok, thank you! I will be there in just a moment!” And we both hung up.

I was immediately greeted with plentiful puppy kisses, from the beautiful Mishka. She was now on all fours, in the bed of my truck, towering over me, making me feel very small. Did I mention, I absolutely LOVE puppy kisses!!?

Less than a minute later, this beautiful young lady comes walking up the road towards us, we introduce ourselves, and shake hands. She apologized about Mishka’s behavior, to which I said I didn’t mind one bit, I was just thankful I wasn’t a meal! We talked and laughed for a bit.

She repeatedly thanked me for staying with her dog, till she got to us, too keep her out of harms way. I told her, It was my pleasure! I briefly explained that I grew up on this road, (literally just across the street from them) and I know all too well how people abuse this road. The last thing any of us need, is a tragedy.

A conversation or two later, we exchanged #’s, and we went our separate ways, with the promises to text each other later, as both of our phones were dying.

Later, when I got a few of my errands completed, I texted her, and we chatted for a bit.

Triple Decker Spicy Pulled Pork Grilled Cheese #Swoon

Ingredients:
6 Challah slices (about 1/2-inch thick)
4 slices Pepper Jack Cheese Butter
1/4 cup Refried Beans
3 tablespoons Pickled Jalapenos (using more or less to taste)
Kosher Salt 1/4 cup Sherry Vinegar
1/3 cup Sugar
3 tablespoons Spicy Mustard
3 tablespoons Hot Sauce (using more or less to taste)
1 cup Leftover Pulled Pork
1 Avocado (sliced)
2 tablespoons Pickled Red Onions (using more or less to taste)
3 tablespoons Fresh Cilantro Leaves

1.) Preheat a panini press to the low setting.

2.) 6 Challah slices (about 1/2-inch thick)
4 slices Pepperjack Cheese
Butter

Make two sandwiches, each of two slices of Pepper Jack Cheese sandwiched between two slices of Challah Bread. Spread Butter on the outside of the sandwiches. Place on the panini press and cook until crisp and golden brown on the outside, and the Cheese is melting.

3.)
1/4 cup Refried Beans
3 tablespoons Pickled Jalapenos (using more or less to taste)
Kosher Salt

Spread Refried Beans on one of the remaining Challah Slices, and top with a layer of Pickled Jalapenos and a pinch of Salt. Sandwich with the remaining Challah Slice and butter the outside of the sandwich. Place on the panini machine and cook until the bread is golden brown and crisp.

4.)
1/4 cup Sherry Vinegar
1/3 cup Sugar
3 tablespoons Spicy Mustard
3 tablespoons Hot Sauce (using more or less to taste)
1 cup Leftover Pulled Pork

In a saucepot over medium-high heat, add the Vinegar, Sugar, Hot Sauce, and Mustard. Stir together until Sugar has melted. Taste for seasoning, adjusting the acidity by adding more or less Sugar. Add the Pulled Pork and stir together until combined. Once the Pork is heated through, assemble the triple decker.

5.) 1 Avocado (sliced)
2 tablespoons Pickled Red Onions (using more or less to taste)
3 tablespoons Fresh Cilantro Leaves

Take one Grilled Cheese, and top with the Pulled Pork. Top the Pulled Pork with the Refried Bean sandwich, and spread the Avocado over the top of the sandwich. Top with Pickled Red Onions and Cilantro, and then top off with the remaining Grilled Cheese.

LTB – The Sisters Movement

It had been a looong, hectic, world wind, confusing few months… I am trying to think back, so I can tell you when it all started, but honestly – I can’t remember… Yikes.

  Well, I want to to fill you in on something that has taken place in my life, since September 2013. Becca, Julez started a new healthy eating regime. Julez & Becca started a blog, around their movement, and I decided to tag along. (I needed to loose some unwanted lbs, anyway, so what did I have to loose?)

  What these 2 girls are doing really is a good thing. Not only for them, but for you too! They aren’t there to be biased, n’ brag about them accomplishments, they are there to help encourage you & so many others too!!

  I know not many of you know what I am about to say, But as I said a week or so ago, I have been pushing myself in ways that I normally wouldn’t, but because I am loosing all of this weight, it has caused me to become much more self confident, so here is a little something about me… Enjoy!

Most of you don’t know this, but I used to weightlift professionally. I was going to the gym on a regular basis; I had a kick-butt trainer who was very professional; he knew what he was doing; he taught me a lot of the tricks I know to this day.
He taught me many ways to get myself motivated, and ways to keep myself pushing myself harder, until I got the results I wanted/needed.

  I worked out in his gym, 7 days a week; 4 hours a day, core, arms, legs; I combined 2 hours of YOGI into every evening/morning, {Depending on the day & the activities planned.}

I wasn’t intrested in winning, or looking sickly buff; I wanted the knowledge, I wanted to build my body THE RIGHT WAY, AND I WANTED TO FEEL “GOOOOOD” ABOUT MYSELF.

Well, I have been following a few people, (Twitter, Blogs, Tumblr, etc.) and they; for the most part; have greatly inspired me to get back into the lifestyle.

Life Changing Events

Hey there!!

I know I have been neglecting my precious blog, but I can honestly say I have been so stinking busy in the past several months, that I could barely keep up!

Could you ever forgive me?? I promise to do better!!

Let’s get back on topic,… There’s a lot of changes going on behind the scenes in my life right now, and I’m finally at a point where I can share some of them with you. It is all so exciting and liberating!

➝ Our Personal Goals
We have finally arrived at a time in our lives, where we are able to both do a change of careers – It is for the best! We’ve been praying long and hard for this, for about 8-10 years or so now.

  If you’ve been following our IG, or know one (or both) of us personally, it is likely you have heard us speak about it. We felt like God was clearly saying “wait”, so we simply started praying for it.

Since then, we’ve prayed that God would show both my Husband and I when to start getting the ball gradually moving, and that he’d make it clear when we were to really get things rolling. (That time is now.)

While we’ve been praying for this for so many years, it has been a little bit of a crazy adventure!

Suddenly going from ‘just praying about it’ to God saying, “here’s the life I want you to pursue.”

Now, we’re finally at a point where we are able to move forward, and we’re super stoked about it. We have been working at our separate jobs constantly praying about our situation, all the while – gathering all of our stuff (that is scattered around the house, some of which is no longer in boxes from our previous move – which occurred a little over a year and 4 months ago) and throwing it all in ‘somewhat’ organized boxes, for storage. All the while, going thru the rest in detail – like mad people!! I personally, and a bit of an ‘Organizatinal Nut’… So much that I have aquired the name – Organizational Natzi (One that I am not fond of).

What we wont take with us, will be in storage, under strict supervision, to hopefully deter any thefts.

Unfortunately, I am unable to give an exact job title, at the moment… However, I can tell you that we will be traveling all over the USA together. You never know, we may just run into you along the way! Now wouldn’t that be cool??

As D-day gets closer and closer – I will be able to tell you more of the specifics, so please keep an eye, here.

As for more regular post ‘sightings’, I am honestly going to aim for no less than 3-4 per week – but I am not making any promises!!

I will, however, be making some serious changes to our blog. Doing away with some things, and adding others.
