I just found out an hour ago that my Very Much Loved, Highly Missed & Cherished 90 year old Grandma Tina in Vancouver, Canada is in the hospital. She’s been in the hospital for almost 2 weeks now, and they don’t expect her to come home… I believe she originally went to the hospital for a broken bone? {Not sure}
She is having complications, and its one thing after another. I am heartbroken, speechless, and crying my eyes out. I haven’t seen her since I was 5 years old!! I just hope and pray that she isn’t in pain!! I wish I could afford to go up there, I want see her so bad… even if she didn’t know I was there, I want to be there for support to her, and the family. {Yes, I’m crying}
Please, all that I am asking is for you to read this in full, and PRAY, PRAY, PRAY!!! I will keep you all posted as I hear…

Simply Perfect Add-in to any Cookout

Asparagus Pasta with Pan Fried Garlic & Lemon Cold Tomato Zucchini Pasta Salad with Sherry Shallot Vinaigrette

I created this pasta salad for my brother Steve’s Independence Day barbecue. I needed to bring a side dish that could sit out safely in the hot sun for several hours, and also fit in well with an American style cookout. An additional benefit is it gave guests a vegan option, and me an excuse to eat lots of cold pasta salad.

The vinegar base in this recipe would pair well with homemade buttermilk fried chicken, or even a store bought rotisserie chicken.

Sherry Shallot Vinaigrette 1/2 cup Extra Virgin Olive Oil 1/4 cup Sherry Vinegar 1 Shallot, chopped 1/ 2 clove Garlic, chopped 1/2 teaspoon Salt Lots of fresh ground black pepper to taste

Puree the ingredients together in a small processor or blender. Set aside.

Tomato Zucchini Pasta 1 pound riccioli shaped pasta, or any favorite shape 2 medium sized zucchini, or 1 large thinly sliced into half moons 1 cup chopped scallions 3-4 ripe Roma tomatoes, chopped 1 tablespoon dried parsley 1 recipe Sherry Shallot Vinaigrette Salt and pepper to taste

1. Boil the pasta according to the package directions in heavily salted water. Drain and rinse in cold water.

2. Meanwhile, prepare the Sherry Shallot Vinaigrette.

3. Toss the pasta together in a large bowl with the dressing and the rest of the ingredients. Salt and pepper to taste. Serve immediately or store covered in the refrigerator until chilled.

Notes: Next time I might throw in some dried or fresh parmesan, and a handful of sliced olives to add another element of flavor. Shredded asiago cheese might also work well.

Thrifty Thursday…String Storage

Welcome to another Thrifty Thursday…using what we have around the house (or super cheap things) to make our lives a little easier.
Today, it’s string storage. I know, trivial, but we all have string right? Well, here’s the new string idea in my sewing room…mounted on the wall.

We all have baskets around the house, but if not, these are from The Dollar Tree for…you guessed it…$1.00.
The baskets hold your balls of string. It’s easy to see, contains them without the balls going every where and the baskets could hold more than one ball too.

I don’t have small children around my house, so I hooked scissors on the basket for easy cutting!

The holes in these baskets allows for the string to be threaded through…just pull as much as you need and cut!! The rolls of string stay inside the baskets.
Easy peasy!

Whoooooo!! SPRING. IS. HERE. !! The weather may not want to behave, but Easter has come & gone, and that, in my book, means SPRING!! Have you noticed that EVERY-THING is thickly covered pollen??? Another sign that SPRING is here. FINALLY!

So, you know that a number of weeks ago, My dream for a garden came true, Thanks to my Dad; I love ya, Dad! X0!

I have a washpail full of Gardening Boards on my Pintrest account – Slap full of ideas, loves, n’ all kinds of stuff! I have several moc-ups of future projects for the the Hubbys & I’s Estate Garden. I have a few I’d like to feature here, tonight… Can you guess what my next few projects are?? I’ll give you a hint… It has something to do with Red Wigglers.

I am going to call it a night. Tomorrw is a big day for me, my Hubby is comming back home. I have missed him so much!! I am going to tackle him in bear hug & lots of kisses when I see him! LOL! {I did that once @ an airport, one year… I nearly knocked him over! He totally didn’t expect it,  It was hilarious!… I wonder if a video of it is floating around YouTube somewhere..?? The start of another exciting adventure!!

Here I sit, next to my Husband, in our GMC truck. We are driving to Va., on a .5O business .5O pleasure trip. We left the house about 010:00 this morning, it will be about a 10 hour drive for us. I absolutely love the drive, its always so real, and beautiful. This will be my first time going to Va. at this time of the year. We have both been to Virginia, together. Heavens, my Husband was born and raised in Va. So this is nothing new for him, I am glad he knows his way around, because I don’t! Lol!
  Whew! Its FREEZING outside! I think they said it was 30* at 4 am, this morning, when I was still up, packing & cleaning house. I didn’t to bed, until about 05:45, and 5 minutes later, my Husband texted and said he was headed home early, so I just stayed in bed, and waited for him to come home. We ended up saying we were going to get up, in an hour, and leave by 09:00. Ha Ha Ha! Yeah. Right! We totally messed that up! Well, the good thing is, that we are on the road, and well on our way. I make it a weekly routine, to go to my parents farm, and catch up. {You never know why you have, till its gone.} My Aunt and Uncle, who have been to the farm numerous times over the years, may remember some of these trucks, and places shown in these pictures.
